Shrimp Scampi Pasta

Ingredients
12 ounces First Street linguine salt
1 cup reserved pasta water
4 tablespoons salted butter
2 tablespoons olive oil
1 tablespoon minced garlic
1 pound First Street cooked shrimp
1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine
1/4 cup fresh lemon juice
1 teaspoon Italian seasoning
1/4 cup Parmesan cheese
1/4 cup fresh parsley
Directions
  1. Boil pasta in salted water according to package directions. Before draining, reserve ½–1 cup of pasta water. Drain and set aside.
  2. In a large skillet, heat 2 tbsp butter and 2 tbsp oil over medium heat.
  3. Add garlic and sauté for about 30 seconds until fragrant (don’t brown it).
  4. Pour in white wine, lemon juice, and Italian seasoning. Simmer 3–4 minutes, until slightly reduced.
  5. Remove from heat and swirl in remaining 2 tbsp butter.
  6. Stir in the cooked shrimp and red pepper flakes. Toss gently and let warm for 1–2 minutes only (just until heated through — don’t overcook).
  7. Add cooked pasta to the skillet. Toss everything together.
  8. Add ¼–½ cup reserved pasta water as needed to loosen the sauce and make it glossy.
  9. Top with Parmesan and fresh parsley.
  10. Taste and adjust salt if needed.
  11. Serve with lemon wedges.
